Emma's favourite Cheesy Pasta

My eight year old niece, Emma, LOVES this recipe. It's basically Macaroni Cheese but don't tell her that.

Ingredients

White sauce

  • 25g/1oz butter

  • 25g/1oz plain flour

  • 600ml/1 pint milk

  • salt and white pepper

Large handful of grated cheddar cheese (or whatever cheese you have handy)

Frozen peas or sweetcorn as you like

Whatever kind of pasta you like

Method

  1. Melt the butter in a saucepan.

  2. Stir in the flour and cook gently for 1-2 minutes.

  3. Take the pan off the heat and gradually stir in the milk to get a smooth sauce. Return to the heat and, stirring all the time, bring to the boil.

  4. Simmer gently for 8-10 minutes and season with salt and white pepper

  5. Meanwhile get your pasta on the go.

  6. Whilst that’s cooking and when the white sauce is as thick as you like it, add in the grated cheese and stir until it’s all melted.

  7. Season to taste but remember some cheese is really salty already, so make sure you taste.

  8. Add in frozen peas and/or sweetcorn and cook through until hot.

  9. Drain the pasta and then add into the sauce.

  10. Serve and enjoy.
