Delish chicken noodle salad
Ingredients
2 roasted chicken breasts
150g of fresh rice noodles
A handful of crushed peanuts
Dressing
2 tbsp Thai fish sauce
Juice of 2 ripe limes
½ tsp caster sugar
4 spring onions
2 medium sized red chillies
A thumb sized knob of ginger
Small bunch of coriander
1 large orange
Method
Prepare the noodles according to the packet
Pour the fish sauce into a small mixing bowl
Add the lime juice to the fish sauce and add the sugar
Trim and finely slice the spring onions and add to the dressing
Halve, de-seed and finely chop the chillies and add to the dressing
Peel and grate the ginger into the dressing and finely chop the coriander and stir in
Remove the peel from the orange and pull aprt into small bits. Technically you should take off all the pith, but life’s too short for some things!
Shred the chicken, toss with the dressing and leave for 15 mins to marinate.
Bung the noodles into the mix, toss well and sprinkle the chopped peanuts on top.
