Chorizo, bean and pepper stew


Ingredients

  • 1 large red onion, sliced

  • Half a chorizo ring, chopped into 1cm squares

  • 1.5 peppers – what ever colour you prefer

  • Two tins beans – any you like

  • One tin chopped tomatoes

  • Paprika

  • Chilli flakes

  • Half a jar of harissa paste

  • Bunch of chopped coriander

Method

  1. Slowly sweat the onion in around 2 tblspns of olive oil. Don’t let them brown or burn. Turn the heat up and add the chorizo. Fry until the oil in the pan is infused with the red chorizo flavours. Add the peppers and fry for another 5 mins. Don’t let them stick.

  2. Add in the beans, the tomatoes, the paprika, the chilli flakes and the harissa. Cook for about 20 mins.

  3. Turn off and leave for the flavours to infuse for about 2 hours. This is important as you won’t get the deep flavour otherwise.

  4. Add the chopped coriander and serve.

  1. That’s it! Dead easy
