Chicken and Broccoli pasta bake - great for leftovers from Sunday lunch
Ingredients
Cooked chicken - as much as you need for as many people that you're cooking for
White sauce ingredients plus a chicken stock cube (OR, you can use a tin of chicken soup)
Cooked broccoli - as much as you need for as many people that you're cooking for
Your favourite pasta (enough for however many people you are serving)
Parmesan
Salt and pepper
Method
Pop the oven on at 180 degrees
Shred the chicken
Make the white sauce as normal, but replace half of the milk with the same amount of chicken stock, don’t make it too thick or else the bake will have no sauce
Chop the cooked broccoli into fine pieces
Cook the pasta
Mix the chicken in with the pasta, sauce and broccoli in the pan. Season with the salt and pepper
Pop into a greased baking dish
When cool, grate parmesan over the top, put in the oven and wait until bubbling. It’ll take around half an hour.
