Basic tomato sauce - for use as a pizza topping or a pasta sauce


Italian recipes often use a blend of basil and oregano for basic tomato sauce recipes. If you can buy fresh, brilliant, if not, dried will do.

Ingredients

  • One tin of chopped tomatoes

  • 1 finely chopped onion

  • 2 crushed garlic cloves

  • Handful of fresh basil

  • Two teaspoons dried oregano

  • S&P

Method

  1. Finely chop the onion and sweat slowly until translucent

  2. Add the garlic and cook for a couple of minutes but don't let it brown

  3. Add the tomatoes

  4. Rip the fresh basil into the sauce and add the oregano

  5. Season, then leave to simmer for 15 mins until nice and thick. If you're using for pizza, it'll need to be thicker than if you're using for pasta.
